Ultimate Avocado Toast
This avocado toast is the perfect breakfast: satisfying, fresh, and full of healthy fats and proteins that will keep you going until lunch!
I personally prefer a savory breakfast over sweet, but I can’t stand to eat the same thing every morning. While eggs are a typical go-to for breakfast, this avocado toast is a quick and easy way to mix it up. In the VanDillen household, it is now considered a staple. This recipe is hard to beat when we find ourselves rushing out the door.
It doesn’t get much easier than this. Throw some toppings on a piece of toast, and voila! You have a tasty, fresh breakfast. Add a smoothie or some seasonal fruit on the side for an extra energy boost. It’s a great way to get in an extra serving of fruit & veggies in the morning. As a matter of fact, this recipe is actually vegan. But the best part is, it still tastes like a treat.
Since this recipe only uses half an avocado, we typically save the other half and use it to make guacamole later. (Tip: to keep the other half of the avocado fresh, leave the pit in, squeeze some lime or lemon juice on top, and cover with plastic wrap. It will stay for a day or two in the fridge.) You can also swap in a baby avocado and use the whole thing.
Variations
There are endless combinations you can use to create delicious avocado toast recipes, which is the best thing about it. Want something more filling? add meat, cheese, or an egg. Or all of the above! I love adding pepper jack cheese and turkey bacon. Want more crunch? Try using lettuce instead of spinach. Experiment with different herbs to get unique flavors.

Ultimate Avocado Toast
Ingredients
- 2 slices Whole grain bread We love Seedtastic by Simply Nature
- 1 medium tomato, sliced
- ½ medium avocado or 1 small avocado
- sprinkle oregano Use fresh if available, otherwise dried is fine
- sprinkle salt & pepper Freshly ground is best
- ½ cup baby spinach leaves
Instructions
- Toast bread.
- Meanwhile, slice avocado & tomato.
- Layer ingredients onto toast in the following order:– Avocado– Oregano, salt, & pepper– Tomato– Spinach
- Serve with fruit for a perfect, balanced breakfast!
Notes
- Add bacon/turkey bacon & swap spinach for lettuce to create a BLTA.
- Take it to the next level by adding a slice of cheese – we love this with pepper jack.
- Swap oregano for cilantro for a twist. You can even add a hint of lime for extra guacamole-inspired flavor.
